Stuffed Roasted Red Peppers

I saw Emeril do this on his show as a starter, but, if you combine this with the pasta and garlic, basil, wine sauce it will make a meal.

Ingredients

Roast the peppers until the skin is charred and will come off easily. Peel the peppers, cut off the tops, and remove the seeds and veins.

Place one slice of mozzarella cheese and one basil leaf in each pepper. Roll the pepper around the cheese and basil to make a nice little package.

Place the pepper packages on a pan and put in the oven to heat. They don't need to cook since the peppers are already cooked. Just long enough to get the cheese started to melt.

Drizzle with balsamic vinegar when served.
