The glaze is made by combining the egg, mustard, crushed red pepper, and lemon juice in a blender. Start the blender and add the oil a little at a time until the contents emulsifies and gets a little thick. The amount of oil will depend on when the glaze is thick enough.
The scallops look like little cylinders. Slice to about half their height. This helps them cook faster so they won't get tough.
Place 2 scallop halves in a scallop shell that is suitable for baking. Drizzle the glaze over the scallops filling the scallop shells. Cook the scallops in a preheated 450° oven for 12 to 14 minutes or until the glaze is browned.
Serve in the scallop shells.
